INGREDIENTS

1 Medium Onion (Coarsely Chopped)

3 Medium Scallions (Chopped)

2 Scotch Bonnet Chiles (Chopped)

2 Garlic Cloves (Chopped)

1 Tablespoon Five-Spice Powder

1 Tablespoon AllSpice Berries (Coarsely Grounded)

1 Tablespoon Ground Pepper (Coarsely Grounded)

1 Teaspoon of Dried Thyme

1 Teaspoon grated Nutmeg

1 Tablespoon Salt

½ Cup of Soy Sauce

1 Tablespoon Vegetable Oil

4 Pounds of Quartered Chickens

2 Cups of Beef Stock

In a food processor combined all ingredients (except Chicken) Apply Marinade to Chicken for 12 to 24 hours

Bake or Grill covered for maximum heat effect (turn occasionally) until well browned
